Ingredients:
Dried coconut slices 1/2 cup
Orange 700g
Green Lemon 1 ~ 2
Salt
1/4 teaspoon
Pepper 1/8 teaspoon
Olive oil 3 tablespoons
Lettuce 300 ~ 350g
Method:
Preheat the oven to 350°F. Put the dried
coconut on a baking pan. Bake for 2~3 minutes.
Wash and pat dry the lettuce. Place it in a mixing bowl.
Remove the orange peel. Divide into half and juice half of it. the
other half cut into slices. For the green lemon, remove the peel
and juice it. Grate the green lemon peel.
Put 1/2 teaspoon of the green lemon peer from step 2 in a mixing bowl.
Add in 1 tablespoon of orange juice and 2 tablespoons of lemon juice.
Add in salt and pepper. Add in olive oil gradually and stir to combine.
Pour the orange juice on the lettuce and mix it together. Add in the
orange slices.
Divide into 8 portion and put it on serving plate. Sprinkle the dried
coconut on it. Now it is ready to be served.
Tips: You can replace lettuce with any
green vegetables you like.
