Raw Beef Salad Recipe

Ingredients:

Young Leeks                                     75g

Beef fillets                                        175g

Small spinach or rocket leaves              8

Radishes, cut into thin round slices        4

Cucumber                                         1/4

Young carrots                                    75g

Lemon, cut into thin wedges                1

 

Horseradish Dressing

Horseradish                                       1 teaspoon

Thick Greek yogurt                              75g

Method:

  1. Blend horseradish into the yogurt. Cover the sauce with plastic film and refrigerate it.

  2. Cut young leeks into fine strips about 1 1/4 inch long. Same for carrots. Remove seed of the cucumber and cut it into thin strips. Wrap the beef with Clingfilm and refrigerate it for 30 minutes.

  3. Blanch the leeks in boiling water for 10 second. Drain and put it again in cold water. Seperate it from cold water and pat dry thoroughly

  4. Remove the beef from refrigerator. Cut the beef into thin slices. Arrange it on the serving plates.

  5. Assemble the spinach, carrots, leeks, cucumber and radishes in separates piles around the sliced beef. Pour some dressing on it. Serve with lemon wedges.
