Coffee Curry Recipe

Ingredients:

Pork fillet, slices 250g

Vegetable oil     20ml

Onion               1

Garlic                2

Canned tomato   1

Guinness Beer     100ml

Cappuccino        100ml

Tomato paste     2 tablespoons

Vegetable stock   200ml

Curry powder       1 teaspoon

Brown sugar         1 teaspoon

Oregano              1/2 teaspoon

Cumin powder       1/2 teaspoon

Coriander powder  1/4 teaspoon

Cocoa powder      1 teaspoon

Dried red cayenne 2

Canned red bean   1

Canned corn         1/2

Salt

Pepper

 

Method:

  1. Wash and pat dry the pork fillet, cut it into cubes. Cut the onion in small cubes. Grated the garlic.

  2. Pour the oil into a cooking pot. Put it over medium high heat. When the oil is hot, add in garlic and onion. Stir for a while. Add in pork fillet and stir until it is cooked.

  3. Add in all ingredients expect corn and red bean into the cooking pot. Stir to combine all. Add in red bean and stir. Turn to medium heat and cover with lid. Cook for about 30 minutes but stir the mixture on and off.

  4. Add corn into the mixture and cook for another 10 minutes or until it is thicken.

  5. Pour it on serving plate and it is now ready to be served.
