Trim off the fat on the rump steak and
cut it into thin strips. Preheat a microwave browning dish on high for
the maximum time allowed the dish’s instruction manual.
Combine all the ingredients or the
lime-ginger sauce in a small bowl. Set the bowl aside and season the
beef strips with a generous grinding of black pepper.
When the browning dish is heated, brush ½
tablespoon of oil evenly over the dish to coat it. Sear half of the
beef strips on the dish, stirring and turning the meat with a wooden
spoon.
Once the beef is seared, after 1 or 2 minutes, transfer it to a baking
dish.
Wipe off the browning dish with paper
towel and reheat for 3 minutes. Brush the remaining oil on the dish and
sear the remaining beef in the same way.
Add the spring onion, carrots and red
pepper to beef. Pour the sauce over all and microwave on high for 3
minutes. Place the beef and vegetables on serving plate and it is now
ready to be served.
