Mango Chicken Recipe

Ingredients:

Chicken breast meat 450g

Mango                    1

Green Onion             1

Garlic, minced          1 tablespoon

Soy Sauce              2 1/2 tablespoons

Pepper      

Vegetable oil           1 tablespoon & 1 teaspoons

Sugar                    1 teaspoon

Corn starch            2 teaspoons

Water                    1 tablespoon

Rice wine                3 tablespoons

Black pepper

 

Method:

  1. Combine soy sauce, pepper, vegetable oil, sugar, corn starch and water in a mixing bowl.

  2. Wash and pat dry the chicken breast meat. Cut it into cubes. Marinate it with the sauce in step 1. Marinate for at least 1 hour.

  3. Peel and cut the mango into cubes. Cut green onion to about 1/2 inch lengthwise.

  4. Pour 1 tablespoon of vegetable oil into a frying pan and heat it. When the oil is hot, add in minced garlic.

  5. When the garlic is brownish a little, add in chicken breast meat and cook until the meat is cooked. Add in rice wine and black pepper and sauté. Add in mango cubes and green onion and stir again. When the mango is soft, remove from heat and put in on serving plate.
