Method:

Put a cooking pot over low heat. Add in pepper and stir. Remove from
heat when it start to brownish.

Cut the green onion in lengthwise. Mash the green onion and ginger.
Combine green onion, ginger, white wine and pepper in a mixing bowl.

Wash and pat dry the pork ribs. Add the pork ribs to the mixture in
step 2 and marinate. Refrigerate it for 1 day.

After 1 day, put the pork ribs in a steamer and steam for about 1 hour
or when it is cooked.

In a cooking pot, place a baking paper in it. Add rice, brown sugar and
tea leaves on it. Put a grill above the tea leaves. Put the pork ribs
on the grill and turn to medium heat.

When the brown sugar us melting, cover it with lid. Use a wet towel,
cover the edge of the lid. Smoke for about 30 minutes. Remove from
heat. Cut into serving sizes.
