Whole Chicken

Sugar
1 tablespoon
Water
6 cups
Galangale,sliced
15 slices
Turmeric,sliced
6~7 slices
Cinnamon stick

Star anise

Method:

Wash and pat dry the chicken.

Put sugar in a deep skillet over low heat. Stir a little for the sugar
to melt and heat until it is brownish. Add in water, turmeric, galangale,
cinnamon stick and star anise.

Bring the water to a boil. Put the whole chicken in with the breast
facing down. Scope some boiling water and pour on the chicken. Cover
with a lid and turn to low heat. Cook for 10 minutes.

Turn the chicken around and close the lid to cook fro about 5 minutes
more.

After 5 minutes, the chicken should be cooked and left with little bit
of sauce.

Cut it into serving size and serve with the sauce.
