Indian Vegetarian Curry Recipe

Ingredients:

Coconut milk/Milk       5 Cups

Desiccated coconut   150g

Turmeric leaf             2

Lemon Grass             9

Salt                        1/2 teaspoon

Sugar                      1/4 teaspoon

Potatoes                  2

Vegetarian Mutton    400g

Olive oil                  3 tablespoons

 

Sauce

Dried Chili, grated    10

Chili,grated            10

Ginger,grated         10g

Galangale, grated    10g

 

 

Method:

  1. Peel the potatoes and cut it into half.

  2. Put the olive oil in skillet over medium heat. Add in the grated chili, dried chili, ginger, galangale and  lemon grass. Stir for about 30 second and add in potatoes, vegetarian mutton and coconut milk. Bring it to boil and cook until the potatoes is soft. Add in salt and sugar.

  3. Add in desiccated coconut and turmeric leaf. Turn the heat to medium-low and cook until the mixture is thicken.

  4. Serve with bread or rice.
