Steamed Cucumber Recipe

Ingredients:

Large cucumber                   1

Black pepper, freshly ground

Thick Greek yogurt                250g

Fresh dill                             1 tablespoon

Parsley, chopped                  1 tablespoon

Fresh tarragon, chopped        1/2 teaspoon

Fresh tarragon sprigs             4

 

 

Method:

  1. Peel the cucumber and cut into 1 inch pieces. Remove the seed.

  2. Set a vegetable steamer in the pan and bring the water to a boil. Place the cucumber in the steamer, season with some black pepper. Cover the pan and steam for about 3 to 4 minutes.

  3. Mix the dill, yogurt, parsley and chopped tarragon in a pan. heat the mixture over very low heat for about 1 minute, until the yogurt is warm.

  4. When the cucumber is done, transfer it to serving bowl. Garnish the cucumber with tarragon sprigs and serve with warm yogurt sauce.
